Great Harvest knife.
I bought the Opinel Mushroom knife to use when my Northspore Oyster blocks were ready to harvest. It worked great. The curved blade helps reach and cut clusters from the block. Great for trimming too. Nice and sharp blade locks at the top, open or closed. The brush is handy as well.
