Snow oyster (Pleurotus ostreatus) -- also called "winter oyster" -- is a popular firm oyster variety. They have sweeter flavor and aroma than other oysters and hold their shape and texture when cooked. (The taste of snow oyster mushrooms is very mild, and some even describe it as slightly woody and earthy.) Snow oyster mushrooms are a great mushroom for beginners. They colonize quickly and are reliable producers. They are also a cold weather loving strain that tend to fruit in the cooler months.
Recommended use:
- Snow oyster sawdust spawn can be used for log projects and/or outdoor beds, containers, and buckets.
- Sawdust spawn is ideal for larger log projects of 10 or more logs.
- This is not a mushroom grow kit. Snow oyster sawdust spawn must combined with a substrate (like straw) or used in log inoculation in order to fruit.
Upon receiving your spawn:
Remove it from the shipping box as soon as possible. Then, unfold the top of the bag, making room for air space. It's also important to check and confirm that the filter patch is not obstructed. This will help the organism breathe and continue to thrive!

To grow on logs using sawdust spawn, you will need a Log Inoculation Tool, Log Sealing Wax, and Wax Daubers.
For larger log projects you may also want to purchase an Angle Grinder Adapter and specialized 12mm drill bit.

Logs:
Snow oyster works well with the log, stump, and totem methods. Colonization is fast and should start producing in 4-12 months. They fruit best in the spring and fall and prefer softer hardwoods such as poplar and aspen, though they will also work on maple.

If you don’t plan to use your snow oyster sawdust spawn right away, store in the refrigerator. Use within 6 months of receipt.

Snow Oysters can easily replace button mushrooms in most recipes and pair well with many cuisines and flavors. Like all oyster mushrooms, they retain water and may develop a viscous texture when undercooked. If you prefer a firm or dryer texture, continue to cook them until their liquid has reduced and cooked off and they begin to brown.

If you’re going to consume home-grown mushrooms, make sure to cook your fresh mushrooms thoroughly with heat. If it is your first time eating this species, it is best to start with a small amount to check for allergies, even if cooked.

Beautiful and delicious
We planted these in the fall and they started to fruit about a month and a half later. They are beautiful and delicate looking and taste amazing. We got the sawdust spawn and planted them in layers of wood chips.

Great oyster
These oysters kind shocked me how super bright white they are and they taste really good.

First time grower!
I purchased the sawdust spawn last fall and decided on the totem method. Living in Alaska, I wasn't sure if I should try to inoculate the logs outside during the winter. So I brought the cut logs into the garage and placed the spawn as described in the instructions. It was difficult to keep rhe logs moist in the garage, but I did my best with a spray bottle. This spring they were placed outside in a shaded area and not a peep out of them. I was worried that everything had dried out and died while in the garage. I hadn't check on them in a week and to my amazement, MUSHROOMS!!!!!! Some were a bit to large/old I believe (my fault for giving up on them), but 4.4lbs for my first harvest! I still can't believe it. It's been a great learning experience and look forward to expanding my mushroom patch!

Ready To Go!!!
Just received my grain spawn in the mail. The couple of weeks turnaround before shipping was well worth it, because the bag of Snow Oyster spawn was Very well colonized out of the box. Can’t wait to spawn this to substrate! I’ve got some Pink Oyster already, and it will be interesting to see just how different the fruiting conditions will really be. With the mild winters we’ve been having up here in Zone 5, it will be nice to have some harvest after the vegetable crops and Other mushrooms have gone to sleep for the winter. Great Job North Spore!

SNOW OYSTER MUSHROOM-spawn
Great product, arrived promptly and quite healthy and viable. After about 2 weeks in a straw bed, I have great mycelia running along! Nice work folks!!

A white explosion
I ordered the wrong product and they quickly sent me the right one. The sawdust bag come with some white growth already in it. I only used about 3/4 of the bag and what was left just looked like sawdust. Later that week the bag of sawdust looked like a bag full of marshmallows! It's just exploding everywhere.

Very healthy
My spawn arrived in great condition and is growing well in dirty straw. After a full week of heavy rain I was surprised to see how well it was doing despite the poor conditions.

New to Mushrooms!
This was my first year growing mushrooms and I have to say the information that North Spore provides have me a lot of confidence in trying something new. I would recommend to anyone to watch all their videos and read the literature, if you cannot find what you need their their staff was very helpful as well. One thing I did not see ahead of time was that the spawn should be refrigerated until used. If you order more than 3 bags of sawdust spawn you might need a cooler because each bag was 5 lbs and is the size of a loaf of bread. Just something to consider when you are timing the delivery of your spawn and substrate. Everything was well packaged and labeled with species and production dates. Nothing left for me to do, but water my beds and wait.
