L'huître des neiges (Pleurotus ostreatus) – également appelée « huître d'hiver » – est une variété d'huître ferme populaire. Utilisation recommandée :

Inoculation

Logs:

Snow oyster works well with the log, stump, and totem methods. Colonization is fast and should start producing in 4-12 months. They fruit best in the spring and fall and prefer softer hardwoods such as poplar and aspen, though they will also work on maple.

Storing

If you don’t plan to use your snow oyster sawdust spawn right away, store in the refrigerator. Use within 6 months of receipt.

Cooking

Snow Oysters can easily replace button mushrooms in most recipes and pair well with many cuisines and flavors. Like all oyster mushrooms, they retain water and may develop a viscous texture when undercooked. If you prefer a firm or dryer texture, continue to cook them until their liquid has reduced and cooked off and they begin to brown.

Cautions & considerations

If you’re going to consume home-grown mushrooms, make sure to cook your fresh mushrooms thoroughly with heat. If it is your first time eating this species, it is best to start with a small amount to check for allergies, even if cooked.

Sawdust spawn is sterilized sawdust colonized with mushroom mycelium. It’s used to inoculate a growing substrate such as logs, wood chips, or outdoor garden beds to start mushroom growth.

It serves as the "seed" for your mushroom crop — transferring live, growing mycelium into your chosen growing medium.

Sawdust spawn is best for outdoor projects like logs, stumps, or garden beds and is slower to contaminate.
Grain spawn is ideal for indoor grows or bulk substrate inoculation because it colonizes faster but is more contamination-sensitive.

Sawdust spawn is mixed or packed into a substrate (like logs or wood chips) to inoculate it. Common methods include:

  • Drilling and filling holes in logs
  • Layering in outdoor wood chip or straw beds
  • Mixing with sterilized sawdust or wood pellets for bag cultivation

Most sawdust spawn performs best on hardwoods like oak, maple, or beech. Some species (like Wine Cap or certain Oysters) can tolerate small amounts of softwood in the mix.

Buckets of Snow & Blue Oyster Mushrooms

Once I figured out how to prepare the buckets & chopped straw the rest was easy to get done... Then the hardest part is the hurry up & wait & wait. But the wait is definitely worth the time!!! See the added photos.
Besides using them fresh in cooking, I've also dehydrated (for soups & making powder), added to cabbage sauerkraut ferments with other vegetables...delicious!!
Also I found that the timely response from their customer help in answering my asked questions with info has been extremely helpful too.

Got the snow oyster spawn kind of on impulse because I like mushrooms. Ended up being real easy! I used coarse hardwood saw dust from my woodshop and after a few weeks I had plenty. North spore was also very helpful when I had questions. I can't wait to try more varieties.

First time grower!

I purchased the sawdust spawn last fall and decided on the totem method. Living in Alaska, I wasn't sure if I should try to inoculate the logs outside during the winter. So I brought the cut logs into the garage and placed the spawn as described in the instructions. It was difficult to keep rhe logs moist in the garage, but I did my best with a spray bottle. This spring they were placed outside in a shaded area and not a peep out of them. I was worried that everything had dried out and died while in the garage.

I hadn't check on them in a week and to my amazement, MUSHROOMS!!!!!! Some were a bit to large/old I believe (my fault for giving up on them), but 4.4lbs for my first harvest! I still can't believe it. It's been a great learning experience and look forward to expanding my mushroom patch!

Ready To Go!!!

Just received my grain spawn in the mail. The couple of weeks turnaround before shipping was well worth it, because the bag of Snow Oyster spawn was Very well colonized out of the box. Can’t wait to spawn this to substrate! I’ve got some Pink Oyster already, and it will be interesting to see just how different the fruiting conditions will really be. With the mild winters we’ve been having up here in Zone 5, it will be nice to have some harvest after the vegetable crops and Other mushrooms have gone to sleep for the winter. Great Job North Spore!

A white explosion

I ordered the wrong product and they quickly sent me the right one. The sawdust bag come with some white growth already in it. I only used about 3/4 of the bag and what was left just looked like sawdust. Later that week the bag of sawdust looked like a bag full of marshmallows! It's just exploding everywhere.

New to Mushrooms!

This was my first year growing mushrooms and I have to say the information that North Spore provides have me a lot of confidence in trying something new. I would recommend to anyone to watch all their videos and read the literature, if you cannot find what you need their their staff was very helpful as well. One thing I did not see ahead of time was that the spawn should be refrigerated until used. If you order more than 3 bags of sawdust spawn you might need a cooler because each bag was 5 lbs and is the size of a loaf of bread. Just something to consider when you are timing the delivery of your spawn and substrate. Everything was well packaged and labeled with species and production dates. Nothing left for me to do, but water my beds and wait.

After only 1.5 weeks, mycelium is going crazy!

I must've bugged North Spore w/ a zillion questions to make sure I was ordering the right products for my climate, (southern MN), etc. They were so, so helpful and I think they were almost as excited for me to start my mushrooms as I was! I made a bed for these in the shadiest part of my backyard - made w/ straw & oak pellets. I was worried that the straw I used was too large and that there would be too much space for the mycelium to grow well, but I checked the beds this morning and looks like they're forming a nice, thick mat already! Seems like it won't be long before my husband and I are cooking up some yummy snow oyster mushrooms!

I'm just learning,I love eating mushrooms,but don't like wood ticks,so I looked into growing them,I bought a kit first,it was fun,but you don't get alot of them,I started with hardwood ,didn't have alot of luck,so I bought some EZ straw at Lowes,I soak it in lime for 24hrs.,it works much better for me,started out using 5gal.buckets,drill holes into sides it works,I prefer plastic tubes,you can see whats going on.I've bought Snow Oysters from North Spore,makes my job much easier,They have great products,I've been very happy,and they have fast delivery,will be ordering more soon

Great product!

So far I have used this to inoculate logs, make a couple of totems, and use it in a straw bed. Within two weeks the totems have grown together and you can see visible mycelium growth. Will definitely be buying more spore in the future.
