Inoculation

Take note that Almond Agaricus mycelium will die under 35 degrees F. You should only plant when the average temperatures are consistently above 50 degrees F.

Almond Agaricus beds are made by sprinkling spawn and top coating with 3-4 inches of composted substrate. You may choose to inoculate areas underneath garden plants to make use of this shade loving crop. Almond Agaricus loves warmth (remember to never put the spawn in the fridge!)

Beds do particularly well in greenhouses or high tunnels, which will also help extend the season of your Almond Agaricus crop. It is unlikely that your Almond Agaricus crop will overwinter unless it is in a greenhouse, but if it is well-mulched in the fall you may see growth the following season. It is more likely to see second year growth in warmer climates.

Beds should ideally be made from fully finished compost and be at least 3-4 inches deep. One bag of spawn should be enough for a 4 ft by 4 ft area. When the bed begins to show mycelial growth (you can gently brush some compost aside and should see white strands of mycelium running through your compost bed) you should case it with lime treated peat moss or straw. Water the casing and keep an eye out for mushroom pins.

Storing

Do not refrigerate almond agaricus sawdust spawn.

Store at room temperature, away from direct sunlight. Use almond agaricus sawdust spawn within 6 months of receipt.

Cooking

Almond Agaricus is in the same family as cremini, button mushrooms, and portobello mushrooms and can easily replace all of those varieties in most recipes and pair well with many cuisines and flavors. They retain water and may develop a viscous texture when undercooked. If you prefer a firm or dryer texture, continue to cook Almond Agaricus until their liquid has reduced and cooked off and they begin to brown.

Cautions & considerations

If you’re going to consume home-grown mushrooms, make sure to cook your fresh mushrooms thoroughly with heat. If it is your first time eating this species, it is best to start with a small amount to check for allergies, even if cooked.

Sawdust spawn is sterilized sawdust colonized with mushroom mycelium. It’s used to inoculate a growing substrate such as logs, wood chips, or outdoor garden beds to start mushroom growth.

It serves as the "seed" for your mushroom crop — transferring live, growing mycelium into your chosen growing medium.

Sawdust spawn is best for outdoor projects like logs, stumps, or garden beds and is slower to contaminate.
Grain spawn is ideal for indoor grows or bulk substrate inoculation because it colonizes faster but is more contamination-sensitive.

Sawdust spawn is mixed or packed into a substrate (like logs or wood chips) to inoculate it. Common methods include:

Excellent addition to our garden

I spread the sawdust spawn in our garden around our tomatoes and kale in the spring time. By late summer, I got a nice haul of mushrooms several times over! In some cases they grew super fast too - one day I wouldn't notice anything, then a day or two later there would be huge mushrooms! They spread around the garden too, often popping several feet from where I initially planted them. This is going to become an annual tradition for me!

Survived a Cold Snap!

Happy to report my mycelium survived an unusual week-long cold snap where the daily temperature fluctuated between 32 and 40. Wasn’t covered with much more than an inch of manure and a little straw either. Hasn’t fruited yet, but it has been unseasonably cold and cloudy this summer, so I’m hoping to see some action soon.

I planted an outdoor bed in Central Texas early 2021. It was past our normal last frost date so I thought it was safe.

Well it froze outside and I gave up on the patch. In December of 2021, literally the day I moved out of the house, I found a vibrant flush of Agaricus Subrufescens from the bed and around the bed.

I ate well that night.

Despite the low tolerance to cold from this species, I found the NorthSpore spawn capable of surviving and thriving in unexpected conditions. The days the patch fruited were below 55 Fahrenheit, as well.

I am ordering more from their culture library in hopes of breeding an even more cold tolerant variety.

I thought the weather was cooperating when I placed our first attempt of Almond Agaricus in the gardens and was really sad when the weather sent us a really cold snap :(
