Cultivation

Inoculation

Take note that pink oysters will die in temperatures below 40 degrees F and therefore may not overwinter depending on your grow zone. Pink oyster mushrooms are a heat-loving species and should only be planted when average temperatures reach 50 degrees F.

Pink oysters prefer straw to denser woody substrates such as wood chips. You can soak your straw beforehand if you want, spray between the layers, or water it all in one go at the end. Feel free to use other agricultural byproducts here in place of straw, including bean hulls and corn stalks. Avoid anything that has potentially been sprayed by chemicals.

Storing

If you don't plan to use immediately, you can store your spawn in a refrigerator for up to 6 months.

Cooking

Pink oysters mushrooms can easily replace button mushrooms in most recipes and pair well with many cuisines and flavors. Like all oyster mushrooms, they retain water and may develop a viscous texture when undercooked. If you prefer a firm or dryer texture, continue to cook them until their liquid has reduced and cooked off and they begin to brown.

Ingredients

All our spawn is made using organic cultures from our own culture bank. Our sawdust spawn is handmade from a blend of locally sourced, all-natural, organic, and non-GMO woods and supplements from farms and forests in New England and North America

Cautions & considerations

If you’re going to consume home-grown mushrooms, make sure to cook your fresh mushrooms thoroughly with heat. If it is your first time eating this species, it is best to start with a small amount to check for allergies, even if cooked.

Sawdust Spawn Frequently Asked Questions

Sawdust spawn is sterilized sawdust colonized with mushroom mycelium. It’s used to inoculate a growing substrate such as logs, wood chips, or outdoor garden beds to start mushroom growth.

It serves as the "seed" for your mushroom crop — transferring live, growing mycelium into your chosen growing medium.

Sawdust spawn is best for outdoor projects like logs, stumps, or garden beds and is slower to contaminate.
Grain spawn is ideal for indoor grows or bulk substrate inoculation because it colonizes faster but is more contamination-sensitive.

Sawdust spawn is mixed or packed into a substrate (like logs or wood chips) to inoculate it. Common methods include:

  • Drilling and filling holes in logs
  • Layering in outdoor wood chip or straw beds
  • Mixing with sterilized sawdust or wood pellets for bag cultivation

Most sawdust spawn performs best on hardwoods like oak, maple, or beech. Some species (like Wine Cap or certain Oysters) can tolerate small amounts of softwood in the mix.

I hope they survive!

Today is the first day of pinning in a 3' x 5' mushroom bed of Pink Oyster in straw and Aspen shavings after 13 days under a tarp.
Now what!? I took the tarp off and took lots of photos.
Do I need to protect from hard rain at all or just keep it moist?

Congratulations on your first pins! At this point, just keep the bed evenly moist. Rain is perfectly fine!

I planted these 4 days ago in a laundry basket with straw and a makeshift garbage bag to keep humidity high. I can't believe I already have mushrooms . Love your product Northspore

So delicious and beautiful

I was was actually out of town when they arrived. They had to spend a week and a half in the refrigerator before I got home when I was finally able to put them in the garden.
They have done nothing but flourish! I am growing them in a bed with some tomatoes, carrots and radishes I've gotten about four harvests out of one block. I've just been sauteing them with greenbeans, butter and garlic and they actually make me like the the taste of greenbeans!!

Amazing, Kimi! Thank you so much for sharing. We're really happy you're enjoying the experience.

Spread Pink Oyster under my Hazelnut tree, just 10 days ago. Honest! Will leave these to reproduce, if the chipmunks will just leave them alone.

Wow, Donna! Amazing how quickly they can pop up sometimes. Thank you so much for sharing!

3 weeks till first flush

This was my first time making a mushroom bed and it worked well! I had the spawn for a few days before using it and it was already starting to fruit when I made the straw bed. I put the spawn down just after Memorial Day and got my first flush on June 20.

We're so glad the pink oysters worked out! Thanks for the great review, Kathleen!

Above and beyond customer service

I wrote a review earlier and gave three stars because I neutrally didn't know what to think of the fact that my pink oyster sawdust spawn wasn't showing any growth in the 5 to 6 weeks that it's been in my straw outdoor garden bed. North score reached out to me to see if I had any questions and to do some troubleshooting and recommended I give it some time as the temperatures rise. They've been extremely helpful in assessing the situation and seem to definitely stand behind their products!

We really appreciate your support, Heather! The team is here to help if you ever need anything.

Spawned Fast!

My oyster mushrooms spawned in just a few day! I live in Hawaii and found they need mostly shade and i have to water twice a day or they shrivel up and dry out. They lost their pink color and are more of a tan color, that is disappointing. This is my first successful mushroom grow so i am very pleased. It grew fast and i am getting a lot of growth. I am excited to start eating them soon!
