Maitake, auch bekannt als Klapperschwamm (Grifola frondosa), ist ein saftiger Porling mit einer zarten, federartigen Textur und einem erdigen, reichen Geschmack. Maitake kann schwierig zu kultivieren sein und wird daher Hobbyzüchtern empfohlen, die bereits Erfolge mit anderen fortgeschritteneren Arten erzielt haben oder experimentieren und neue Methoden ausprobieren möchten.

Da Maitake kein starker Konkurrent ist, erfordert er eine andere Kultivierungsstrategie. Die Inokulation funktioniert am besten, wenn Holzstämme dampfsterilisiert, in Filterbeuteln inkubiert und kolonisiert werden, dann aus den Beuteln entfernt und teilweise an einem schattigen Ort vergraben werden. 

Eigenschaften: Maitake wird traditionell für seine medizinischen Eigenschaften geschätzt und wurde verwendet, um das Krebswachstum zu reduzieren sowie den Blutdruck und Cholesterinspiegel zu senken. In Humanstudien hat Maitake die Symptome bei Patienten mit Leber- oder Brustkrebs im zweiten bis vierten Stadium um über 50 % verbessert (Lindequist, 2005). Maitake hat auch gezeigt, dass es essentielle Komponenten des Immunsystems aktiviert, einschließlich Makrophagen, T-Zellen und NK-Zellen (Namba et al., 1992). Neben seinen medizinischen Eigenschaften kann Maitake auch getrocknet, pulverisiert und zu einem stärkenden Tee verarbeitet werden. Inoculation

Hen of the Woods will only fruit in oak logs. After a 1-year colonization period above ground, Hen of the Woods logs may be partially buried under 2 inches of top soil to mimic their natural place in an ecosystem. The mushrooms will fruit from logs and emerge out of the soil.

*It should be noted that Hen of the Woods is prone to being out competed by other fungi and is not a reliable producer without first treating your logs. To limit variables we strongly suggest you sterilize 8" by 8" segments of oak log in a pressure cooker or steam sterilizer before inoculation and incubate your log segments for a few months in sealed filter patch bags until they are completely colonized. Remove them from the bag and partially bury them in a shady location.

Cooking

Hen of Woods has a semi-firm texture and earthy flavor. It can be ripped into small pieces and added to a dish or left large to be the centerpiece of a meal. We love to confit Hen of the Woods by slow cooking it at a low temperature in an oven submerged in extra virgin olive oil. After 4-5 hours the Hen of the Woods will be crispy and delicious and you'll have mushroom infused olive oil!

Storing

If you don't plan to use within 3 weeks, you may refrigerate the plug spawn for up to 6 months.

Cautions & Considerations

• If you’re going to consume home-grown mushrooms, make sure to cook your fresh mushrooms thoroughly with heat. If it is your first time eating this species, it is best to start with a small amount to check for allergies, even if cooked.

• Aside from being kiln dried, our wooden dowels are not treated in any other way.

Frequently Asked Questions

After inoculation, most logs take 6–12 months before producing their first flush of mushrooms. Colonization depends on temperature, moisture, and wood type. Once established, a log can fruit for 3–7 years.

Always use freshly cut, disease-free logs. Old or rotting wood may contain competing fungi or be too dry for successful colonization. Ideally, inoculate within 2–4 weeks of cutting.

Plug spawn (wooden dowels) is easier for beginners and ideal for smaller projects. Sawdust spawn is faster to colonize and more economical for larger batches or commercial growers.

Store logs in a shady, humid area close to the ground. In dry or hot weather, occasional watering or soaking can help maintain moisture. Avoid full sun or windy spots, which can cause bark cracking.
