Our friend, Turnip Vegan, renowned chef and cookbook author, for several years now has been growing his own mushrooms at home using our BoomRoom II grow tent in conjuction with our mushroom grow kits and spawn. He then uses his homegrown mushrooms to craft creative, cruelty-free, health-concious recipes to share with us.

Oyster Mushroom & Jackfruit "Fish"
• 3.2 oz fresh pink oyster mushrooms
• 20 oz can young green jackfruit
• 1 Tbsp + 1.5 tsp white miso
• 2 Tbsp avocado oil
• 2 tsp seafood seasoning
• 1 sheet seaweed
• 1/4 cup + 2 Tbsp vegetable broth OR water
• 1/2 cup vital wheat gluten
• Salt & pepper to taste
Ingredients
• 2 cups vital wheat gluten
• 7 0z of Lion's Mane (about 2 cups)
• 1/2 cup nutritional yeast
• 1 Tbsp smoked paprika
• 1 tsp cayenne pepper
• 1 tsp allspice
• 1 tsp mustard powder
• 2 tsp nutmeg
• 1 tsp cinnamon
• 1 tsp salt
• 1 tsp black pepper
• 3 Tbsp of mustard
• 3 Tbsp of maple
• 2 Tbsp water
• 3 Tbsp liquid amino
• 1/4 cup melted butter
Cranberry Glaze
• 1/4 cup of brown sugar
• 3 Tbsp of mustard
• 1-2 tsp of liquid smoke
• 1/2 cup of liquid amino
• 1/2 cup of fresh cranberries
• 1/4 cup of water
Wet Batter
• 1 cup spelt flour OR flour of choice
• 1 cup water
• 2 Tbsp arrowroot powder OR cornstarch
• 1 tsp seafood seasoning
Dry Batter
• 1.5 cups panko bread crumbs
• 1/4 cup cornmeal
• 1/2 tsp seafood seasoning
Additional Ingredients
• Burger buns
• Caper-Feta Spread (see step 10)
• Red onion, sliced
• Sweet peppers, sliced
• Coleslaw
• Plant-based mayonnaise
• Balsamic vinegar
• Frying oil of choice
Step 1. Separate oyster mushrooms from the substrate and gently brush to remove any dirt, if needed.
Step 2. Drain jackfruit well. Place jackfruit chunks on a hard surface and press them so they become flat.
Step 3. Combine the mushrooms and jackfruit in a saute pan on low heat. Cook, pressing out the water with a heavy pan or cast iron press, for 15 minutes or until the water has evaporated. Flip frequently.
Step 4. Preheat the oven to 360 degrees Fahrenheit.
Step 5. Add cooked mushrooms & jackfruit, miso, avocado oil, seaweed, seafood seasoning, and salt & pepper (optional) to a food processor and pulse until you have a finely chopped mixture. Move mixture to a bowl.
Step 6. Add vegetable broth and vital wheat gluten to the bowl and mix well. The dough should absorb all the vital wheat gluten and not be too sticky.
Step 7. Create a ball with the mixture. Divide the ball into 4-5 smaller sections. Form the sections into thin patties on parchment paper.
Step 8. Coat patties with avocado oil and bake at 360 for 10 minutes. Allow patties to rest while you create your Wet Batter, Dry Batter, and Caper-Feta Spread.
Step 9. Preheat frying oil.
Step 10. To make Caper-Feta Spread, combine 1/4 cup plant-based feta cheese with 2
tablespoons of capers and 2 tablespoons of caper juice.
Step 11. Dip patties into Wet Batter, then Dry Batter. Fry until golden crispy.
Step 12. Build a sandwich with the additional ingredients and enjoy!
