French Dip Au Jus Sauce
• Black King Oyster mushroom caps
• 2 Tbsp avocado oil
• 2 tsp fresh minced garlic
• 1/2 onion, diced
• 3 cups vegetable broth
• 2 Tbsp nutritional yeast
• 1 tsp white miso paste
• 1 tsp thyme
• 2 tsp steak seasoning
Black King Oyster Mushroom "Meat"
• 12 oz black king oyster mushroom stems
• 2 tsp - 1 Tbsp steak seasoning
• 1/2 onion, diced
• French Dip Au Jus Sauce
Other Ingredients
• baguette bread
• vegan cheese slices
Ingredients
• 2 cups vital wheat gluten
• 7 0z of Lion's Mane (about 2 cups)
• 1/2 cup nutritional yeast
• 1 Tbsp smoked paprika
• 1 tsp cayenne pepper
• 1 tsp allspice
• 1 tsp mustard powder
• 2 tsp nutmeg
• 1 tsp cinnamon
• 1 tsp salt
• 1 tsp black pepper
• 3 Tbsp of mustard
• 3 Tbsp of maple
• 2 Tbsp water
• 3 Tbsp liquid amino
• 1/4 cup melted butter
Cranberry Glaze
• 1/4 cup of brown sugar
• 3 Tbsp of mustard
• 1-2 tsp of liquid smoke
• 1/2 cup of liquid amino
• 1/2 cup of fresh cranberries
• 1/4 cup of water
Step 1. Harvest mushrooms and remove the caps. Use a peeler to shred the stems, then roughly chop the shredded stems into smaller pieces.
Step 2. On a flattop grill or in a saute pan, heat avocado oil to medium and cook garlic & onion for au jus with a pinch of salt. Cook until the onions caramelize.
Step 3. Combine all ingredients for the French Dip Au Jus Sauce in a small saucepan. Cover and cook on medium for 10 minutes. Turn off the heat and place the sauce to the side.
Step 4. On a flattop grill or in a saute pan, heat avocado oil to medium and cook mushroom stems for 4-5 minutes or until they start to brown. Add steak seasoning and diced onion. Pour about a 1/4 cup of the French Dip Au Jus Sauce onto the mushrooms. Mix and saute until the mushrooms start to get charred on the tips. (Feel free to add more sauce as you cook the mushrooms down.)
Step 5. Add vegan cheese slices on top of the mushrooms. Place a small amount of water around the mushrooms and cover to melt the cheese.
Step 6. Build your sandwich on baguette bread with vegan mayo and charred, melty-cheese-topped mushrooms. Dip into your sauce and enjoy!
