Give a shaded garden bed a delicious winter-growing project with the Snow Oyster Mushroom Garden Bed Kit. Also known as winter oyster, Pleurotus ostreatus is a firm, flavorful variety prized for its sweeter aroma and taste.
This outdoor kit features sawdust spawn, a practical way to introduce oyster mushrooms to a prepared garden bed. As the mycelium establishes in its growing environment, it can produce clusters of snow-white mushrooms for fresh, homegrown cooking.
Snow oysters hold their shape and texture when cooked, making them a versatile choice for sautés, soups, and other dishes where a satisfying bite matters. Their sweet, savory character brings something special to cool-season meals.
Designed for outdoor growing, this kit is a natural fit for gardeners, homesteaders, and curious beginners looking to explore mushroom cultivation beyond the kitchen counter. It offers a hands-on way to make productive use of a suitable shaded space.
As with any outdoor mushroom project, results depend on growing conditions, including climate, moisture, and the placement of the bed. Choose an appropriate outdoor location and follow the included bed-growing guidance to help the spawn establish.
The kit makes a thoughtful gift for gardeners and food lovers who enjoy growing something a little unexpected. It pairs the pleasure of tending a garden with the reward of harvesting an ingredient at home.
Snow oyster mushrooms are a popular oyster variety, valued for their firm texture and pleasant sweetness. Their winter-oyster name makes them an especially appealing choice for growers interested in extending the mushroom-growing season outdoors.
North Spore’s education-first approach helps make mushroom growing more accessible, with resources designed to support growers as they learn. This beginner-friendly garden bed kit is a practical starting point for exploring outdoor sawdust spawn.

Oyster mushroom species are vigorous and grow naturally on outdoor beds of woody debris. They grow best on straw (not hay), hardwood chips, or sawdust.
Oyster mushrooms seem to do better if the beds have a variety of particle sizes, such as a mix of both sawdust and wood chips. Avoid branches or other very large pieces of wood as these take longer to colonize and can create too much air space in the bed.
Mushroom beds do best in partial shade but can tolerate some direct sun. Ideal locations would be at the edge of fields and woods, around the base of trees, in perennial gardens, or as part of the mulch in vegetable gardens, where annual veggies will provide some shade. Once established, Oyster mushroom beds require little maintenance. During dry periods, the bed can be watered but do not over-water, as excessive watering can suffocate the mycelium.
All our spawn is made using organic cultures from our own culture bank. Our sawdust spawn is handmade from a blend of locally sourced, all-natural, organic, and non-GMO woods and supplements from farms and forests in New England and North America.
Oyster mushrooms can easily replace button mushrooms in most recipes and pair well with many cuisines and flavors. They retain water and may develop a viscous texture when under-cooked. If you prefer a firm or dryer texture, continue to cook Oysters until their liquid has reduced and cooked off and they begin to brown.
If you’re going to consume home-grown mushrooms, make sure to cook your fresh mushrooms thoroughly with heat. If it is your first time eating this species, it is best to start with a small amount to check for allergies, even if cooked.

Substrate for sawdust spawn
Best for Oyster, Lion's Mane, Shiitake
Sawdust spawn is sterilized sawdust colonized with mushroom mycelium. It’s used to inoculate a growing substrate such as logs, wood chips, or outdoor garden beds to start mushroom growth.
It serves as the "seed" for your mushroom crop — transferring live, growing mycelium into your chosen growing medium.
Sawdust spawn is best for outdoor projects like logs, stumps, or garden beds and is slower to contaminate.
Grain spawn is ideal for indoor grows or bulk substrate inoculation because it colonizes faster but is more contamination-sensitive.
Sawdust spawn is mixed or packed into a substrate (like logs or wood chips) to inoculate it. Common methods include:
Most sawdust spawn performs best on hardwoods like oak, maple, or beech. Some species (like Wine Cap or certain Oysters) can tolerate small amounts of softwood in the mix.
Whether you’re growing mushrooms at home, in your garden, or at a commercial scale, we offer everything you need to cultivate success.
