I picked up the kit on a whim at the Portland Farmer's Market and have had several flushes of mushrooms from it! It's super cool to just watch the mushrooms grow and do their thing while I work. Once the pins set the mushrooms practically doubled in size in days. Really fun activity and I just picked up my next kit.
This was my second kit from North Spore (the first was lion's mane). The pink oysters are very easy to grow, and the mushrooms are ready to harvest quickly. It's already producing a second round! Just be sure to harvest them before they drop their spores, or you'll get a dusting of them everywhere...
This was the third oyster kit I've grown and seemed to put on new growth the fastest. I swear I could have just sat and watched it grow! It was interesting how each of the three oysters had very different shapes. The pink exposed it's gills far more than the other two. Pink seemed to be less dense when I prepared a meal. I had to be careful not to bruise or crush it as I shredded it for a stir fry. Its flavour reminded me the most of morels. (the most earthy). Once again it was a beautiful sculpture and I was amazed at its transformation from the preceding 12 hours each time I spritzed it! Oh, I was not able to eat all of it when I harvested it. I kept in in the fridge one day and it wilted but still cooked fine and tasted great!
