Le polypore en touffes, également connu sous le nom de Maitake (Grifola frondosa), est un polypore succulent à la texture délicate et plumeuse et à la saveur terreuse et riche. Ses bords dentelés en font un excellent choix pour la friture, la rôtisserie, le sauté, et pour ajouter une touche visuelle à de nombreux plats.

Le polypore en touffes peut être difficile à cultiver, et est donc recommandé aux cultivateurs enthousiastes ayant déjà réussi avec d'autres espèces plus avancées ou cherchant à expérimenter et à essayer de nouvelles méthodes.

Parce que le polypore en touffes n'est pas un concurrent fort, il nécessite une stratégie de culture différente. L'inoculation fonctionne mieux lorsque les bûches sont stérilisées à la vapeur, incubées et colonisées dans des sacs à filtre, puis retirées des sacs et partiellement enterrées dans un endroit ombragé.

Propriétés : Le polypore en touffes est traditionnellement apprécié pour ses qualités médicinales et a été utilisé pour réduire la croissance du cancer ainsi que pour abaisser la tension artérielle et le cholestérol. Lors d'essais cliniques sur l'homme, le polypore en touffes a amélioré les symptômes de plus de 50 % chez les patients atteints d'un cancer du foie ou du sein de stade II à IV (Lindequist, 2005). Il a également été démontré que le polypore en touffes active des composants essentiels du système immunitaire, notamment les macrophages, les lymphocytes T et les cellules NK (Namba et al., 1992). Tout en possédant des propriétés médicinales, le polypore en touffes peut également être séché, réduit en poudre et transformé en une tisane réparatrice. La poudre séchée a montré qu'elle réduisait l'hypertension (Rogers, 2011).

Inoculation

Hen of the Woods will only fruit in oak logs. After a 1-year colonization period above ground, Hen of the Woods logs may be partially buried under 2 inches of top soil to mimic their natural place in an ecosystem. The mushrooms will fruit from logs and emerge out of the soil.

*It should be noted that Hen of the Woods is prone to being out competed by other fungi and is not a reliable producer without first treating your logs. To limit variables we strongly suggest you sterilize 8" by 8" segments of oak log in a pressure cooker or steam sterilizer before inoculation and incubate your log segments for a few months in sealed filter patch bags until they are completely colonized. Remove them from the bag and partially bury them in a shady location.

Cooking

Hen of Woods has a semi-firm texture and earthy flavor. It can be ripped into small pieces and added to a dish or left large to be the centerpiece of a meal. We love to confit Hen of the Woods by slow cooking it at a low temperature in an oven submerged in extra virgin olive oil. After 4-5 hours the Hen of the Woods will be crispy and delicious and you'll have mushroom infused olive oil!

Storing

If you don't plan to use within 3 weeks, you may refrigerate the plug spawn for up to 6 months.

Cautions & Considerations

• If you’re going to consume home-grown mushrooms, make sure to cook your fresh mushrooms thoroughly with heat. If it is your first time eating this species, it is best to start with a small amount to check for allergies, even if cooked.

• Aside from being kiln dried, our wooden dowels are not treated in any other way.

Frequently Asked Questions

After inoculation, most logs take 6–12 months before producing their first flush of mushrooms. Colonization depends on temperature, moisture, and wood type. Once established, a log can fruit for 3–7 years.

Always use freshly cut, disease-free logs. Old or rotting wood may contain competing fungi or be too dry for successful colonization. Ideally, inoculate within 2–4 weeks of cutting.

Plug spawn (wooden dowels) is easier for beginners and ideal for smaller projects. Sawdust spawn is faster to colonize and more economical for larger batches or commercial growers.

Store logs in a shady, humid area close to the ground. In dry or hot weather, occasional watering or soaking can help maintain moisture. Avoid full sun or windy spots, which can cause bark cracking.
