Le Châtaignier (Pholiota adiposa) est un champignon cultivé populaire au Japon. Il produit des chapeaux veloutés, de petite à moyenne taille, délicieusement mouchetés, rappelant la couleur de son fruit éponyme. Une fois cuits, ils dégagent un arôme boisé, une consistance charnue et un goût riche, noisetté et légèrement sucré.

Les champignons châtaigniers ne sont pas trop difficiles à cultiver, mais peuvent poser quelques défis mineurs en matière d'identification. Ils ne sont pas idéaux pour les cultivateurs débutants ou ceux qui ne sont pas familiers avec la façon d'identifier correctement différentes espèces de champignons. Cependant, cette espèce peut être très gratifiante à cultiver.

Propriétés : Le champignon châtaignier possède des qualités médicinales qui inhibent la croissance tumorale et microbienne. Dans une étude menée sur des souris de laboratoire, des polysaccharides extraits du mycélium de champignon châtaignier ont réduit la croissance des tumeurs cancéreuses d'environ 60 % (Ohtsuka et al., 1973). Agissant comme antimicrobien, un extrait de champignon châtaignier s'est avéré inhiber la croissance de bactéries, y compris E. coli et Staphylococcus aureus (Dulger et al., 2002).

Storing

If you don't plan to use within 3 weeks, you may refrigerate the plug spawn for up to 6 months.

Cooking

Once cultivated, the Chestnut mushroom has a full flavor that is evoked with thorough cooking. We recommend you use its rich, nutty flavor as a compliment to autumn soups.

Cautions & Considerations

• If you’re going to consume home-grown mushrooms, make sure to cook your fresh mushrooms thoroughly with heat. If it is your first time eating this species, it is best to start with a small amount to check for allergies, even if cooked.

• Aside from being kiln dried, our wooden dowels are not treated in any other way.

Frequently Asked Questions

After inoculation, most logs take 6–12 months before producing their first flush of mushrooms. Colonization depends on temperature, moisture, and wood type. Once established, a log can fruit for 3–7 years.

Always use freshly cut, disease-free logs. Old or rotting wood may contain competing fungi or be too dry for successful colonization. Ideally, inoculate within 2–4 weeks of cutting.

Plug spawn (wooden dowels) is easier for beginners and ideal for smaller projects. Sawdust spawn is faster to colonize and more economical for larger batches or commercial growers.

Store logs in a shady, humid area close to the ground. In dry or hot weather, occasional watering or soaking can help maintain moisture. Avoid full sun or windy spots, which can cause bark cracking.

The plugs were full of mycelium and there was definitely 100+ in the bag. Plugged a beech with these and shittake. Will definitely update as time goes by and the spores fly.

they came well packed and clean. I managed to use a sterile swab to inoculate agar plates which all grew clean and vigorously, so I now have clean cultures for the near term; and made slants to preserve. A couple plugs went into grain jars for inside growing over the winter, and the rest went into freshly cut oak logs.

The information for planting the plugs was easily understood. We both enjoyed the whole entire process. We are now waiting mushroom growth. Unsure if we will see any this year or not but like our asparagus we plant and wait. See what nature gives us.

Easy Inoculation

During this last winter, we lost two very old trees (a mimosa and a curly leaf pittosporum). Though I know these are not typical woods to inoculate, they are both hardwood and I thought I would try. The North Spore Chestnut Plug Spawn made inoculating the wood quite easy, particularly since the pittosporum is still standing (cut to 6’ high). It has been about a month since inoculation and a few places where the wax has dropped off, mycelium can be seen spreading through the trunk. That, to me, is success. Now it is up to Mother Nature.

Chestnut Inoculation

I got my pellets as expected also my wax through North Spore. Once I got my red oak logs, it was very simple to put together. I used a regular drill and found it easy to inoculate my logs. I have been misting every day but will need to do a follow up review next year. However, North Spore has been very reliable and easy to order from.
