Plus résistante au froid que d’autres espèces, la souche de départ de champignon Flammulina velutipes est un moyen parfait de s’enthousiasmer quant au potentiel en champignons de votre jardin. Cette souche certifiée biologique par l’USDA est appréciée pour son apparence délicate et sa texture croustillante et savoureuse. Cette souche produit d’élégantes grappes de champignons minces, jaune doré, avec de longues tiges filiformes et de petites calottes convexes. Une fois cuits, les champignons enoki dorés développent une saveur douce, légèrement fruitée avec de subtiles notes umami, ce qui en fait un ajout polyvalent aux soupes, aux sautés, aux nouilles et plus encore.

Receiving & Storage

Remove starter from the shipping box as soon as possible. Then, unfold the top of the bag, making room for air space. It's also important to check and confirm that the filter patch is not obstructed. This will help the organism breathe and continue to thrive!

Plant & Grow starters should be used within 1 week of receipt. If you don't plan to use immediately, you can refrigerate your block for up to 6 months.

How to Grow

Golden Enoki are fast-growing and perfect for new outdoor cultivators. With their distinctly colored caps and crisp flavor, they bring both beauty and bounty to shaded garden spaces.

How to Initiate Fruiting Outdoors

  • Choose a shaded location: Find a cool, humid spot like under trees, beside a fence, or in a sheltered garden bed.
  • Bury your starter: Remove the plastic entirely from your starter. Bury it completely and cover with about 1" of soil or mulch.
  • Maintain consistent moisture: Mist the surrounding soil or mulch regularly (1–2x daily in dry weather) to prevent the starter from drying out.

When to Plant

  • Golden Enoki is a cold fruiting species. They thrive in temperatures from 40° to 45° F.

Special Considerations

  • Watch for rapid growth, Golden Enoki may grow quickly when given the right conditions. Don't forget to harvest before the caps flatten out and drop spores.
  • Consider placing straw or leaf mulch on the block to help regulate humidity without suffocating airflow.

Harvesting

  • Harvest golden clusters when cap edges are still curled under for best texture, flavor, and shelf life.
  • Caps are tan to orange in color, and less than 1" across when fully grown. In moist conditions the cap will be slimy or sticky in texture.
  • Stems are very thin and delicate and may get as long as 6" in length. Stems may also be fuzzy and dark in color.
  • Spore color: white.
  • Harvest young to reduce spore production and improve storage.
  • Use both hands or a clean knife to gently remove entire clusters without damaging the substrate.

With minimal effort, this starter will often produce multiple flushes—making this a rewarding mushroom to grow in the garden.
