Ingredients
• 1 cluster Snow Oyster mushrooms
Chili Pepper Passion Fruit Sauce
• 1/2 cup passion fruit cubes melted or passion fruit pulp
• 1 Tbsp agave
• 2 Tbsp chili pepper paste
• 2 Tbsp avocado oil
• 2 tsp apple cider vinegar
• 2 tsp minced garlic
• 1 tsp minced onion
• 1/4 cup coconut amino
• 1 tsp red pepper flakes
• Salt to taste
Wet Batter
• 1 cup of flour
• 1 tsp of red pepper paste
• 2 tsp of paprika
• 2 tsp of cumin
• 2 tsp of minced onion
• 2 tsp of minced garlic
• 1 + 1/4 cup of plant milk of choice
Ingredients
• 2 cups vital wheat gluten
• 7 0z of Lion's Mane (about 2 cups)
• 1/2 cup nutritional yeast
• 1 Tbsp smoked paprika
• 1 tsp cayenne pepper
• 1 tsp allspice
• 1 tsp mustard powder
• 2 tsp nutmeg
• 1 tsp cinnamon
• 1 tsp salt
• 1 tsp black pepper
• 3 Tbsp of mustard
• 3 Tbsp of maple
• 2 Tbsp water
• 3 Tbsp liquid amino
• 1/4 cup melted butter
Cranberry Glaze
• 1/4 cup of brown sugar
• 3 Tbsp of mustard
• 1-2 tsp of liquid smoke
• 1/2 cup of liquid amino
• 1/2 cup of fresh cranberries
• 1/4 cup of water
Dry Batter
• 1 + 1/2 cups of flour
• 1 cup of potato starch
• 2 tsp of minced garlic
• 2 tsp of minced onion
• 1 tsp of cumin
• 2 tsp chili powder
• Salt & Pepper to taste
Other Ingredients
• Lettuce or Wraps
• Chopped red bell pepper
• Avocado
• Black beans
• Red onion
• Garlic sauce or sauce of choice
Step 1. If harvesting, cut mushrooms from the growing block. Pull mushrooms apart. Clean with a soft brush if needed.
Step 2. In a bowl, combine ingredients for wet batter. In a separate bowl, combine ingredients for dry batter.
Step 3. Dip mushrooms into the wet and then the dry batter. Set on a flat surface until ready to fry.
Step 4. Mix all ingredients for the sauce in a bowl. Melt passion fruit cubes or extract pulp from fresh passion fruit.
Step 5. Deep fry the mushrooms at 370 degrees Fahrenheit until golden crispy. Toss mushrooms in chili passion fruit sauce. Make them as saucy as you like!
Step 6. Build a wrap with all ingredients or eat by themselves and enjoy.
