Our friend Turnip Vegan has been inspiring us for years with his passion for creating exciting, healthy, and beautifully crafted vegan food. We've collaborated on some mouth-watering recipes recently such as a lion's mane hot dog, a lion's mane "fish" sandwich, a crispy oyster mushroom wrap, a shiitake "meatball" sandwich, a reishi pineapple spice drink & popsicle, and poblano pepper pink oyster enchiladas. This time, he's brought us jerk wonton tacos with your homegrown lion's mane mushrooms!

Ingredients
7 - 8 oz of lion's mane mushroom
Jerk Sauce Marinade
1 finely chopped scotch bonnet pepper deseeded or habanero pepper deseeded
1 1/2 tbsp brown sugar
1/2 tsp cinnamon
2 tsp lime juice
1/4 cup coconut aminos
2 Tbsp coconut oil
2 Tbsp Jamaican jerk seasoning
1 tsp minced garlic
1/2 tsp dried parsley
Salt & pepper to taste
Mango Salsa
1 finely chopped mango
1/2 cup finely chopped red bell pepper
2 tbsp of lime juice
1/2 cup finely chopped red onion
1/4 cup of finely chopped cilantro
Salt & pepper to taste
Other ingredients
1 thyme leaves
1 pack of wonton wrappers
Oil to spray wonton
Jalapeño sauce or sauce of choice
Step 1. Harvest, remove the substrate, and brush off any particles. Add lion's mane to the pan and cook the water out of the mushroom with a pan or press. Flip and repeat until most of the water is cooked out.
Step 2. Mix all ingredients for Jerk sauce marinade. Add Lion's Mane to a container or bag and add marinade. Cover or close the container and allow it to marinate for 1 - 2 hours.
Step 3. Add marinated Lion's Mane pan and cook for 3-4 minutes on medium on both sides. Add extra jerk marinade while cooking on both sides and fresh thyme.
Step 4. Chop all ingredients for mango salsa, add to a bowl, and mix.
Step 5. Add a little oil to a bowl or plate. Add each wonton wrapper to the dish and oil both sides. Drap over an oven pan sides and bake for 4-5 min at 370 degrees.
Step 6. Build your tacos with wonton shells, jerk lion's mane mushrooms, mango salsa, and the sauce of choice. Enjoy!
