Our friend Turnip Vegan has been inspiring us for years with his passion for creating exciting, healthy, and beautifully crafted vegan food. We've collaborated on some mouth-watering recipes recently such as a Lion's Mane hot dog, a Lion's Mane "fish" sandwich, a crispy Oyster mushroom wrap, a Shiitake "meatball" sandwich, a Reishi pineapple spice drink & popsicle, poblano pepper Pink Oyster enchiladas, jerk Lion's Mane wonton tacos, and an Italian Oyster teriyaki bowl. This time, he's brought us brown sugar cranberry Lion's Mane made with homegrown Lion's Mane mushrooms!

Ingredients
• 2 cups vital wheat gluten
• 7 0z of Lion's Mane (about 2 cups)
• 1/2 cup nutritional yeast
• 1 Tbsp smoked paprika
• 1 tsp cayenne pepper
• 1 tsp allspice
• 1 tsp mustard powder
• 2 tsp nutmeg
• 1 tsp cinnamon
• 1 tsp salt
• 1 tsp black pepper
• 3 Tbsp of mustard
• 3 Tbsp of maple
• 2 Tbsp water
• 3 Tbsp liquid amino
• 1/4 cup melted butter
Cranberry Glaze
• 1/4 cup of brown sugar
• 3 Tbsp of mustard
• 1-2 tsp of liquid smoke
• 1/2 cup of liquid amino
• 1/2 cup of fresh cranberries
• 1/4 cup of water
Other Optional Ingredients

• sliced oranges
• whole cloves
Ingredients

• 1 tsp cayenne pepper
• 1 tsp allspice
• 1 tsp mustard powder
• 2 tsp nutmeg
• 1 tsp cinnamon
• 1 tsp salt
• 1 tsp black pepper
• 3 Tbsp of mustard
• 3 Tbsp of maple
• 2 Tbsp water
• 3 Tbsp liquid amino
• 1/4 cup melted butter
Cranberry Glaze
• 1/4 cup of brown sugar
• 3 Tbsp of mustard
• 1-2 tsp of liquid smoke
• 1/2 cup of liquid amino
• 1/2 cup of fresh cranberries
• 1/4 cup of water
Step 1. Pulse Lion's Mane, nutritional yeast, smoked paprika, cayenne pepper, allspice, mustard powder, nutmeg, cinnamon, salt, black pepper, mustard, maple, water, liquid amino, and butter in a food processor until you have a paste.
Step 2. Combine vital wheat gluten in a large bowl and knead until mushroom meat gets tough.
Step 3. Preheat steamer pan.
Step 4. Shape the mixture into a loaf, then wrap the loaf tightly 2-3 times with parchment paper.
Step 5. Steam the mushroom meat, wrapped in parchment paper, for 1 hour or until firm to the touch. Flip every 30 minutes.
Step 6. Add all cranberry brown sugar sauce ingredients to a pan and cook on medium with a lid for 20 minutes or until the cranberries have cooked down to liquid.
Step 7. Unwrap the meat and brush with cranberry brown sugar sauce. Bake for 20 -25 minutes at 340 degrees Fahrenheit. Add more of the sauce on top when you are ready to serve.
Step 8. Cool for a few minutes before cutting. You can also process this into "grounds" if you like.
TIP: If you are not serving this right away, store it in the refrigerator, wrapped in parchment paper and in a sealed container to prevent drying.
