Pink Oyster (Pleurotus djamor) is a tropical strain that produces beautiful clusters of light pink to deep pinkish-red caps that are a favorite at farmers' markets. They are succulent and savory, and have a denser texture than other oyster varieties. They are great for beginners because they colonize quickly and are reliable producers in warmer temperatures.
When cultivated outdoors, pink oysters fruit prolifically throughout summer. As a tropical strain, they also thrive with higher humidity. Note that they are not cold tolerant and their shelf life is shorter than other oyster varieties.

Upon receiving your spawn:
Remove it from the shipping box as soon as possible. Then, unfold the top of the bag, making room for air space. It's also important to check and confirm that the filter patch is not obstructed. This will help the organism breathe and continue to thrive!

Take note that pink oysters will die in temperatures below 40 degrees F and therefore may not overwinter depending on your grow zone. Pink oyster mushrooms are a heat-loving species and should only be planted when average temperatures reach 50 degrees F.
Pink oysters prefer straw to denser woody substrates such as wood chips. You can soak your straw beforehand if you want, spray between the layers, or water it all in one go at the end. Feel free to use other agricultural byproducts here in place of straw, including bean hulls and corn stalks. Avoid anything that has potentially been sprayed by chemicals.

Do not refrigerate pink oyster spawn. If you don't plan to use immediately, you can store your spawn in a cool, dry area out of direct sunlight for up to a month.

Pink oysters mushrooms can easily replace button mushrooms in most recipes and pair well with many cuisines and flavors. Like all oyster mushrooms, they retain water and may develop a viscous texture when undercooked. If you prefer a firm or dryer texture, continue to cook them until their liquid has reduced and cooked off and they begin to brown.

I didn't realize this would fruit so quickly. Received my order last week, inoculated my straw mulch around the squash, and mushrooms popped up this week. The slugs/insects noticed them before I did and had a bit of a feast.

Great spawn, even for indoors!
Because I have less-than-ideal conditions and have messy methods, I bought this pink oyster sawdust spawn (rather than the grain spawn version) to help decrease the chance of contamination. I inoculated 3 "experimental" bucket batches (3 buckets per batch): One batch was with hot water pasteurized aspen wood shavings; another with white vinegar pasteurized chopped straw; and the last one with not-pasteurized-at-all straw pellets. I'm a very beginner mushroom grower, and I even opened the bag and inoculated each bucket test batch several days apart over the course of a week. Despite my lack of effort to "work cleanly," this spawn was so vigorous and awesome, that all of my buckets colonized very well (some faster than others), and the straw pellet buckets started showing primordia at the 14-day mark (and are now fruiting nicely in my Martha tent set, which I love and also got here at North Spore). The others are taking a bit longer, but the particle sizes of those substrates are way bigger in those batches. I used a very generous spawn rate of between 8-18% spawn to wet substrate weight (appropriate for messy, lazy bucket growing), in case anyone is wondering. I very much recommend this North Spore sawdust spawn, even for indoor growing.
Spawned Fast!
My oyster mushrooms spawned in just a few day! I live in Hawaii and found they need mostly shade and i have to water twice a day or they shrivel up and dry out. They lost their pink color and are more of a tan color, that is disappointing. This is my first successful mushroom grow so i am very pleased. It grew fast and i am getting a lot of growth. I am excited to start eating them soon!
