Shiitake (Lentinula edodes) is a flavorful mushroom that produces brown, medium-to-large, umbrella-shaped caps that fruit from late summer through the fall growing season. They are a delicious edible fungus from East Asia and their flavor is often described as rich, savory, buttery, and umami.

Shiitake tends to produce generous flushes and they are a great mushroom for beginners. Once inoculated, logs can fruit in as little as 6 months from inoculation, but generally take 9-12 months. And a single log can continue to fruit for many years if kept in the right conditions.

Recommended use:

  • Shiitake sawdust spawn is only recommended for log projects.
  • One bag of sawdust spawn will reliably inoculate 20 logs.

Shiitake log chart:

BEST WOOD SPECIES* Alder, Beech, Hophornbeam, Hornbeam, Hard Maple, Oak, Sweetgum
OTHER SUITABLE SPECIES Basswood, Birch, Chestnut, Eucalyptus, Hickory, Soft Maple, Pecan, Sassafrass, Sycamore, Tuliptree, Tupelo, Willow
AVOID Ash, Aspen, Black Walnut, Cherry, Cottonwood, Elm, Hemlock, Peach, Pear, Pine

Upon receiving your spawn:

Remove it from the shipping box as soon as possible. Then, unfold the top of the bag, making room for air space. It's also important to check and confirm that the filter patch is not obstructed. This will help the organism breathe and continue to thrive!

Inoculation

Shiitake works best with the log method. Colonization takes at least 9-12 months, and fruiting tends to occur throughout the summer to fall growing seasons and after rainfalls. Preferred wood species are oak, maple, or beech.

Storing

If you don’t plan to use your shiitake sawdust spawn right away, store in the refrigerator. Use within 6 months of receipt.

Cooking

"5 of the Best Shiitake Mushroom Recipes"

Shiitake has a meaty texture when cooked and is good for drying and reconstituting in winter soups. It pairs beautifully with tamari, ginger, and garlic and can bring needed umami to many different dishes. These mushrooms are delicious sauteed and can be used in stir-fries, risottos, ramens, on pizzas, or simply eaten by themselves.

Ingredients

All our spawn is made using organic cultures from our own culture bank. Our sawdust spawn is handmade from a blend of locally sourced, all-natural, organic, and non-GMO woods and supplements from farms and forests in New England and North America.

Cautions & considerations

If you’re going to consume home-grown mushrooms, make sure to cook your fresh mushrooms thoroughly with heat. If it is your first time eating this species, it is best to start with a small amount to check for allergies, even if cooked.

Sawdust Spawn Frequently Asked Questions

Sawdust spawn is sterilized sawdust colonized with mushroom mycelium. It’s used to inoculate a growing substrate such as logs, wood chips, or outdoor garden beds to start mushroom growth.

It serves as the "seed" for your mushroom crop — transferring live, growing mycelium into your chosen growing medium.

Sawdust spawn is best for outdoor projects like logs, stumps, or garden beds and is slower to contaminate.
Grain spawn is ideal for indoor grows or bulk substrate inoculation because it colonizes faster but is more contamination-sensitive.

Sawdust spawn is mixed or packed into a substrate (like logs or wood chips) to inoculate it. Common methods include:

  • Drilling and filling holes in logs
  • Layering in outdoor wood chip or straw beds
  • Mixing with sterilized sawdust or wood pellets for bag cultivation

Most sawdust spawn performs best on hardwoods like oak, maple, or beech. Some species (like Wine Cap or certain Oysters) can tolerate small amounts of softwood in the mix.

Great spawn!

I ordered shiitake spawn about two years ago and finally got my first harvest this spring! It took a while to inoculate, the tree was quite large, but the wait was absolutely worth it. I figure the bigger the log, the longer it will keep producing, so I’m looking forward to many more flushes to come. Very happy with the spawn quality!

Thanks for the great review, Natalia! Your shiitakes look amazing.

Years of shiitake

My kids and I had a blast inoculating a bunch of logs with shiitake spawn a few years ago and we do it every year. This has given us pounds of mushrooms to eat and give away. Haven't had any that hadn't grown, although the squirrels seem to like to dig into the spawn in the log. This hasn't stopped the logs from producing more mushrooms than I know what to do with. I would and have recommended North Spore to my friends and they have had great results. Would recommend to others.

The quality of mushroom spawn was fantastic. I was able to harvest mushrooms in about five weeks. That’s gonna depend how you decide to grow it.

Mushrooms are good

Good, still really figuring the mycology side of things , but hopefully, next year, shitakes.

Let us know how your grow goes, Guy! Thanks for your review.

Easy to use and a generous supply!

This bag was huge, and chock-full of mycelium in short order. It was easier than expected to fill the logs. I'd expected that the spawn would have to be rationed, but there was so much I ended up going in search of some stumps to inoculate. So glad I bought here (had a bad experience with some I got on Amazon).

Diana, thanks so much for the great review! We are so happy to hear you had a great experience using our spawn!

I'll call it a labor of love. It was indeed a project, but it was was enjoyable. Logs are starting to produce after just about a year.

Your shiitakes look great, Rudy! Thanks so much for sharing.

5 star Shiitake

A few years ago I ordered North Spore’s shiitake spawn expecting to grow mushrooms. Now I order EVERY spring. What I didn’t expect was to become emotionally attached. These logs are now part of the family. They live rent-free in the shade, eat logs, and produce gourmet-level mushrooms that taste like they’ve been marinated in forest wisdom.

From the first flush, I was hooked. North Spore made the whole process easy—even fun. Clear instructions, solid packaging, and spawn that actually does its job. Mycelium spread faster than gossip in a small town.

Bonus: I now walk around saying things like “these are fruiting beautifully” and “the logs need to be soaked,” which makes me sound like a forest wizard or someone who definitely has their life together.

Would I recommend? Yes. Would I fight a raccoon for the last shiitake on the log? Also yes.

Awe Deana! You have us tearing up over here! Thanks so much for taking the time to share your experience with us. It really is an incredible thing to connect to the food you are growing. We love to hear your passion!

Wow get out of here!

Fantastic! Shiitake sawdust spore was fun and easy to inoculate. I did 12 logs a mix of beech, oak, and maple Nov 2023. Today all the oak and maple are in bloom. Must be a half bushel of shiitake today. Next time I do this I’ll skip the beech and double the logs to do 24 because the package could have gone that easily.

Wow Richard! Thanks so much for sharing your successful shiitake flush with us. They look amazing! Hope you enjoy them.

Totally hooked

We had a lot of fun harvesting logs and inoculating them with friends at our homestead. Then last summers weather made them go bonkers and we had logs fruiting in a steady stream for weeks at a time! We are expanding our log set up and plan to bring in more friends and family to spread the productive fun around!

Your review made our day, Cliff! We're so happy you're enjoying the experience. Our team is here to help if you ever need anything.

Sawdust Spawn

Haven't used yet,but the spawn I bought last year has produced a few nice ones I would suggest bird netting, nothing is worse than losing half a crop to birds. Lesson learned!!!

Thanks for sharing, Grant! If you need help with anything, please reach out.

Amazing Flushes!

Over a year after innocultating several oak logs , I've had several huge flushes after rainy weather. Nothing like no effort results!

I'm continually impressed with the quality of spawn from North Spore and will continue to go to them first for my mushroom growing needs.

Great pics, Lindsey! We’re so happy you’re enjoying the experience!

Nice surprise after a rainstorm

I purchased the shiitake sawdust spawn and used the totem method. The wood is sweet gum that fell in a storm in late January. The wood was green, measuring 12 inches around by 32 inches tall. I cut several layers of wood and stacked as shown in the videos North Spore provided.
The first shiitake mushrooms appeared about 6 months later.
the logs were kept damp but they would not produce again. I thought the endeavor was lost and began to ignore them.
This spring, about one year later, the logs were again covered in mushrooms.
Now they produce every time it rains. The attached photo was taken two days after a big rainstorm and 18 months after the totem was set.
Im curious of how long this set up can produce.

Nice surprise after a rainstorm

I purchased the shiitake sawdust spawn and used the totem method. The wood is sweet gum that fell in a storm in late January. The wood was green and had leaf growth and is about 12 inches in diameter, 32 inches tall.
I cut several layers of wood and stacked as shown in the videos North Pore provided.
The first flush of shiitake mushrooms appeared about 6 months later. Unfortunately I was traveling and they were too mature for use.
I kept the logs damp but they would not produce again.
I’m looking forward to trying other varieties of mushrooms if I can acquire additional logs.
