Looking for the perfect side dish to wow your holiday guests or elevate a weeknight dinner? This Oyster mushroom stuffing is a hearty, savory dish that pairs the earthy richness of Italian Oyster mushrooms with the comforting texture of toasted bread and aromatic herbs. Completely vegan-friendly (but flexible for non-vegan swaps), it’s packed with fresh flavors like rosemary, thyme, and sage, creating a cozy, delicious dish that will have everyone coming back for seconds. Whether you're serving it at Thanksgiving or as a part of a simple dinner, this stuffing is guaranteed to impress!

Ingredients
• 1 pound Italian Oyster mushrooms, trimmed and sliced (ok to substitute other mushrooms!)
• 1 loaf fresh bread (French, Italian, or sourdough), chunked (about 10 cups)
• 1 large onion, small dice
• 3 celery stalks, ¼” sliced
• Vegan (or standard) butter, 8 oz, cubed
• 2–3 cups vegetable (or chicken) stock
• 1/4 cup fresh parsley, chopped
• 1 tablespoon fresh thyme leaves, minced
• 1 teaspoon fresh rosemary, minced
• 1 teaspoon sage, finely chopped
• Salt and freshly ground black pepper, to taste
Recipe
1. Preheat the oven to 350°F (175°C). Spread the cubed bread on a baking sheet and toast in the oven for 10–12 minutes until lightly golden and crisp. Set aside to cool.
2. Heat butter in a large skillet over medium heat. Add the mushrooms, onions and celery, cooking until softened and mushrooms begin to brown.
3. Add stock and bring to a simmer. Season to with salt and pepper.
4. Place herbs over top of toasted bread in a large 9x13” baking dish and pour contents of pan overtop. Toss quickly.
5. Cover with foil and bake in the oven at 375°F (190°C) for 25 minutes. Remove foil and continue cooking until top of stuffing is golden brown.
