SNOW OYSTER MUSHROOM CULTIVATION
Pleurotus ostreatus: Very popular, fleshy, firm, edible snow white oyster-shaped caps often found growing on old dying maple trees. Snow Oysters are a cold weather loving strain and tend to produce mushrooms in the cooler months.
Snow Oyster spawn comes in three distinct styles:
Sawdust Spawn - Used for larger mushroom log projects, or by those wanting to inoculate logs every year. Used for small to large enthusiast or commercial projects. On Logs - Snow Oyster works well with the Log, Stump, and Totem methods. Colonization is fast and should finished within 4-12 months. Fruiting events are variable and triggered by rain or temperature shifts. They fruit best in the spring and fall and prefer softer hardwoods such as poplar and aspen, though they will also work on maple.
On Beds- Snow Oyster spawn can be spread in chopped straw or wood chips as shown in the video below! Making outdoor beds is one of the easiest methods for growing any type of oyster mushroom.

Cooking:Snow Oysters can easily replace button mushrooms in most recipes and pair well with many cuisines and flavors. Like all Oyster mushrooms, they retain water and may develop a viscous texture when undercooked. If you prefer a firm or dryer texture, continue to cook Snow Oysters until their liquid has reduced and cooked off and they begin to brown.
