Weekends are perfect for a pizza night with the family, and adding your own homegrown mushrooms to your pizza (even frozen ones) is a simple way to add flavor and nutrients to your family's favorite foods. Below, you will find our simple pizza recipe using our homegrown Italian oyster mushrooms fresh from our BoomRoom II grow tent. The kids did most of the work while I got to toss some dough around and work the oven - not a bad gig!
We are foragers too and it's ramp season in New York, so obviously they've made their way onto our pie. Alternatively, you could use garlic, scallions, or chives. The key in this recipe is to roast the mushrooms ahead of time so they cook to perfection once the pizza's in the oven and the cheese has turned to bubbly goodness. This recipe is so quick, easy, and delicious - making it the perfect dish to share with your family!
Homemade Italian Oyster Mushroom Pizza
Yield: One 14" pizza
Prep time: 20 minutes
Cook time: 12 minutes
Ingredients
• 8 oz Italian oyster mushrooms, pulled or cut into bite-sized pieces
• 2 oz ramp leaves and stems (or garlic, scallions, or chives)
• 2 tbsp fresh herbs, chopped (we used sage, parsley, and thyme)
• 2 tbsp pure olive oil
• Salt and pepper to taste
• Dusting of flour
• 1 pizza dough ball (20-24 oz)
• Pizza sauce (about 4 tbsp)
• Mozzarella cheese (about 1 cup)
• Drizzle of extra virgin olive oil
• 2 tbsp Grated Parmesan cheese
Special Equipment
• Pizza stone
• Pizza peel
Method
1. Pre-heat oven to 425° F. Place pizza stone in oven to heat.
2. Combine oyster mushrooms, ramps, herbs, and olive oil in a large mixing bowl and toss gently. Place on sheet tray and roast (on separate rack than stone) for about 15 minutes until golden brown. Remove and set aside.
3. Raise heat on oven to 450°. On a floured surface, roll out pizza dough and place on floured peel and build you pizza: sauce, cheese, and toppings.
4. Carefully slide onto stone and cook to desired doneness (12 minutes or so, longer for crispier crust). Remove and place on cutting board when done.
5. Top with extra virgin olive oil, parmesan cheese and enjoy
