Our friend, Turnip Vegan, renowned chef and cookbook author, for several years now has been growing his own mushrooms at home using our BoomRoom II grow tent in conjuction with our mushroom grow kits and spawn. He then uses his homegrown mushrooms to craft creative, cruelty-free, health-concious recipes to share with us. Below is his Double Chocolate Chaga Mushroom Rocky Road Ice Cream.
Vegan Double Chocolate Chaga Mushroom Rocky Road Ice Cream
Mushrooms in ice cream? It works, and hear me out. Chaga has an earthy, bitter taste, and chocolate is bitter as well. Once you mix the two with coconut milk, maple, and cashews, you have this perfect balance for this ice cream. Chaga is known as a superfood and a mushroom that is hard to find in stores. Rocky Road was one of my favorite childhood ice cream flavors. It was fun remaking it with only plants and mushrooms.

Ingredients
• 1 + 1/4 cups coconut milk = boiled down to 1 cup
• 2 Tbsp of ground chaga
• 1/2 cup cocoa powder
• 1/3 cup pure maple syrup
• 1 cup cashews
Optional Ingredients
• 1 Tbsp chopped almonds
• 3 Tbsp chocolate chunks or chips
• 2 Tbsp plant-based marshmallows
Ingredients
• 2 cups vital wheat gluten
• 7 0z of Lion's Mane (about 2 cups)
• 1/2 cup nutritional yeast
• 1 Tbsp smoked paprika
• 1 tsp cayenne pepper
• 1 tsp allspice
• 1 tsp mustard powder
• 2 tsp nutmeg
• 1 tsp cinnamon
• 1 tsp salt
• 1 tsp black pepper
• 3 Tbsp of mustard
• 3 Tbsp of maple
• 2 Tbsp water
• 3 Tbsp liquid amino
• 1/4 cup melted butter
Cranberry Glaze
• 1/4 cup of brown sugar
• 3 Tbsp of mustard
• 1-2 tsp of liquid smoke
• 1/2 cup of liquid amino
• 1/2 cup of fresh cranberries
• 1/4 cup of water
Step 1: Step 1. Add 1 +1/4 cups of coconut milk and 2 tbsp of ground chaga to a pan and simmer for 20 minutes, then place to the side to chill.
Step 2: Add chaga, coconut milk, maple syrup, cashews, and cocoa powder to a high-powered blender and blend until you have a smooth texture.
Step 3: Add to an ice cream machine cup and follow the steps from the machine, or freeze in a shallow pan and mix every 30 minutes until ready. (Freeze the pan before adding the ice cream blend).
Step 4: Follow your ice cream maker's steps to add almonds, chocolate, and marshmallows.
