Snow oyster (Pleurotus ostreatus) -- also called "winter oyster" -- is a popular firm oyster variety. They have sweeter flavor and aroma than other oysters and hold their shape and texture when cooked. (The taste of snow oyster mushrooms is very mild, and some even describe it as slightly woody and earthy.)
Snow oyster mushrooms are a great mushroom for beginners. They colonize quickly and are reliable producers. They are also a cold weather-loving strain that tends to fruit in the cooler months.
Recommended use:
- Snow oyster sawdust spawn can be used for log projects and/or outdoor bed, container, and bucket projects.
- Snow oyster sawdust spawn must combined with a substrate (like straw) or used in log inoculation in order to fruit.
- If growing on logs, one bag of sawdust spawn will reliably inoculate up to 20 logs. (You can calculate how much you'll need here.)

Upon receiving your spawn:
Remove it from the shipping box as soon as possible. Then, unfold the top of the bag, making room for air space. It's also important to check and confirm that the filter patch is not obstructed. This will help the organism breathe and continue to thrive!

To grow on logs using sawdust spawn, you will need a Log Inoculation Tool, Log Sealing Wax, and Wax Daubers.
For larger log projects you may also want to purchase an Angle Grinder Adapter and specialized 12mm drill bit.

Logs:
Snow oyster works well with the log, stump, and totem methods. Colonization is fast and should start producing in 4-12 months. They fruit best in the spring and fall and prefer softer hardwoods such as poplar and aspen, though they will also work on maple.

Snow Oysters can easily replace button mushrooms in most recipes and pair well with many cuisines and flavors. Like all oyster mushrooms, they retain water and may develop a viscous texture when undercooked. If you prefer a firm or dryer texture, continue to cook them until their liquid has reduced and cooked off and they begin to brown.

All our spawn is made using organic cultures from our own culture bank. Our sawdust spawn is handmade from a blend of locally sourced, all-natural, organic, and non-GMO woods and supplements from farms and forests in New England and North America.

If you’re going to consume home-grown mushrooms, make sure to cook your fresh mushrooms thoroughly with heat. If it is your first time eating this species, it is best to start with a small amount to check for allergies, even if cooked.
*Wood recommendations are based on our own testing. You may have different results experimenting with other wood species.

Great product!
So far I have used this to inoculate logs, make a couple of totems, and use it in a straw bed. Within two weeks the totems have grown together and you can see visible mycelium growth. Will definitely be buying more spore in the future.
Snow oyster
I’ve been loving this species. Beautiful mushrooms on my straw logs. Thanks north spore.
Amature grower
I'm just learning,I love eating mushrooms, but don't like wood ticks,so I looked into growing them,I bought a kit first,it was fun,but you don't get alot of them,I started with hardwood ,didn't have alot of luck,so I bought some EZ straw at Lowes,I soak it in lime for 24hrs.,it works much better for me,started out using 5gal.buckets,drill holes into sides it works,I prefer plastic tubes, you can see whats going on.I've bought Snow Oysters from North Spore, makes my job much easier,They have great products,I've been very happy, and they have fast delivery, will be ordering more soon
Fall Fungi, biome building and cold frames.
I ordered a package of Snow Oyster sawdust spawn and it arrived almost immediately. Inside the package the mycelium were going crazy, forming thick mats along the borders and clearly eager to get out and do their work. I am in the process of putting my garden to bed and use fungi to help build up the organic material for the coming spring, I have a ditch full of Wine Cap inoculated sawdust that I shovel in to beds before covering with leaf litter and straw. I decided to build up one of my beds and cover it to extend my growing season and figured Snow Oyster would make the perfect fungal partner for my new cold frame. I spread straw and spawn between my kale and collards and cabbage and now I have a 4 inch thick mat of densely bound organic material and mycelium and my plants seemed to get a bit of a kickstart once it was fully colonized. I am going to cover it this afternoon with poly and am hoping to get at least one flush before the poly gives way to the frost. I really like Pleurotos for its aggressive colonization and this strain particularly for its cold tolerance. Definately give this a try, great for the soil, great for plants, delicious Oysters and a good reason to look forward to the rain.
Can’t wait!
