SHIITAKE MUSHROOM CULTIVATION

Lentinula edodes: Shiitake is very nutritious and medicinal mushroom that produces edible brown umbrella-shaped caps. It is traditionally used in East Asian cuisine but can be adapted into many different styles of cooking.

Check out our Spawn FAQ to figure out what type of logs you can use!

Sawdust Spawn - Used for larger mushroom log projects, or by those wanting to inoculate logs every year. Used for small to large enthusiast or commercial projects. Best for inoculating 10 or more logs. *You need an Inoculation Tool to use Sawdust Spawn! For larger projects you may want to purchase an Angle Grinder Adapter and specialized 12mm drill bit! Sawdust spawn comes in bags approximately 5.5 lbs each.

Inoculation: Works best with the Log Method. It will take at least 12 months of colonization before producing mushrooms and tends to fruit throughout the summer to fall growing season and after rainfalls. Preferred wood species are oak, maple, or beech.

Difficulty: Beginner

Shiitake is a great mushroom for beginners. They colonize quickly and are the most reliable producers of any species. Great for commercial cultivation!

Cooking: Shiitake has a meaty texture when cooked and is good for drying and reconstituting in winter soups. It pairs beautifully with tamari, ginger, and garlic and can bring needed umami to many different dishes.

Properties: In addition to acting as a general immune system booster, Shiitake can be used as a tonic to promote overall liver and kidney health (Marley, 2009). Shiitake also contains high concentrations of the substance eritadenine, which may be beneficial in reducing blood cholesterol levels (Enman et al., 2007). Beyond helping relieve ailments, Shiitake has nutritional value due to its ability to absorb Vitamin D. Drying Shiitake in the sunlight will increase Vitamin D levels by more than a hundred times compared to Shiitake dried in the dark (Stamets, 2005).

Shiitake Mushroom Sawdust Spawn

Used this bag with the tool and drill bit recommended and was quite surprised how many logs I got in total, 20 on the larger side, and still a few extra smaller ones while still having a few handfuls of sawdust left at the end. The spawn came in the mail looking healthy and everything delivered much fast than expected! Can't wait to see all of the bounty we'll harvest in a year or two. My only suggestion would be to grab more wax than you think as you'll probably get more logs inoculated than initially planned on.

Shiitake Mushroom Sawdust Spawn

I recently purchased the North Spore Trio of Log Inoculation Tools. This made short work of inoculating a bunch of logs with North Spore Shiitake Spawn. The bag was colonized and the spawn was great. Now I just need to be patient and let the mushrooms do the work!! I have already bought a second bag of this spawn so I would recommend it.

Easy to use

I bought the trio of inoculation tools , wax and 1 package of shiitake sawdust spawn. Their drill bit made short work out of drilling a few hundred holes ,and inoculating the logs with sawdust was a snap. The only issue I had was the wax didn’t stick very well to some of the ends, and a few of the wax covered spawn came off , I’m not sure if this is normal or not? Other than that , everything went well! I would recommend this to anyone looking to grow mushrooms!

Can't wait!

I ordered 5 bags to innoculated 50 logs. We started receiving downed wood from chip drop.com (recommend checking it out if you'd like to receive free recently cut wood from local arborists). We received so much fresh red and white oak we decided to go big and try 50! We made it a family event, and with a socially distanced team of 5 people we finished in an afternoon. Our logs weren't uniform (some much greater diameter than recommended, because that's what we had available), so it was a bit more work than it would have been if the logs were smaller. But it made for a great outdoor family event. I bought northspore spawn two years ago and had our first mushrooms fruit last summer! We didn't do it quite right (using a big candle to drop wax and used willow instead of oak) so I'm looking forward to the success with the oak. We also ordered a 25lb bag of natural soy wax online, it seemed like 20 lbs would have been enough for our project. All in all, the spawn came in 1-2 weeks and it looked like it was good quality! We also ordered the spawn innoculating tool trio, which was helpful. Thanks, Northspore!
